HistoryJim Kalscheur founded UW Provision in 1958 on University Avenue in Madison, on what is now part of the UW Madison campus. He purchased the meat shop from Ted Hilgers then moved the plant to Middleton in 1973. We now occupy a constantly growing plant of at least 100,000 square feet of USDA inspected space, and it is one of the largest plants in the industry. |
