Gail Ambrosius Chocolatier makes deliciously exotic dark chocolates in her Atwood Avenue shop for legions of loyal fans in Madison and around the country. Inspired by the unique flavors of the finest single-origin chocolates, I am constantly concocting new signature truffles and treats to create the ultimate chocolate experience.

Philosophy

I love the neighborhood where my shop is located. I’ve lived in the Atwood area since the early ‘80s and it’s never lost its magic for me. It’s uniquely Madison, with its small shops, fantastic restaurants and diversity of residents. We benefit from the great community here, and are fortunate to be able to give back. We donate all profits from our popular Goodman Community Center hearts directly to the Goodman Community Center. We also strive to partner with other local businesses as much as possible, including Potter's Crackers, Ale Asylum, Elegant Foods, several local printing shops, etc... 

History

My dream has been to open my own chocolate shop, with the nudge of a layoff I made it happen by taking business classes and training in France with my heroes of chocolate; Valhrona chocolate maker and Michael Cluizel chocolatier. Just before Thanksgiving in 2004, I launched Gail Ambrosius Chocolatier. I hired my first employee within six months. Today, I employ 14 people and together we produce several thousands of pieces of chocolate by hand every day during our peak seasons. Recently, we have been featured on Food Network's "America's Best," in Bon Appetit and O Magazine, and I appeared on the Today Show in the spring 2011.
