PhilosophyWe have just begun on our journey to become an earth friendly cafe, and we're very excited about all there is to learn. We have reached out to several local farmers this year who will be providing us with everything from fresh farm produce, to free range chicken. We are participating at the Mid-West Renewable Energy fair as a food vendor this year and hope to learn much that we will be able to bring into our own cafe practices. We personally always try to patronize Madison's fine local restaurants. We know first hand how hard it is to keep a small, local business running - you've got to love it! |

HistoryThony Clarke is the founder and force behind Cafe Costa Rica. After running his own Caribbean pastry business for many years in Costa Rica, Thony moved to the U.S. with his wife to start his family. Like many new immigrants, he found himself working in many small jobs for very little money to support his family. When he was hurt at one of these jobs, he decided that it was time to start working for himself once again. He started with the Mango Man Latin Soul Food food-cart in 2003, and with some luck and a little help he was finally able to open up his own cafe in 2006. He takes great pride and joy at being able to honor his mother by sharing her wonderful recipes with his customers. |
