True Coffee Roasters offers more than 15 varieties of coffee from the world’s finest coffee-producing regions, roasted in small batches in our Fitchburg roastery and priced from $10 – $15 per pound. The cafes in Fitchburg and Stoughton have freshly roasted beans by the pound, a selection of several brews each day, a full espresso bar, teas, smoothies, blenders as well as a variety of breakfast and lunch items including pastries, soups, salads and sandwiches. Beans roasted daily are available for sale in one-pound bags or a reusable coffee can. Each time the can is returned for a refill, guests will receive a 20% discount on their beans. Philosophy

Unfortunately, our main raw ingredient - coffee beans- are not available here in Wisconsin. However, we want to provide our area with the highest quality coffees at a fair price. Our owners are long-time Madison residents (a UW grad among them) who have been part of the restaurant and/or coffee scene here for many years - and are committed to bringing incredible products to those who live here with us. We currently use Gallup! Bakery for our cafe baked goods and are working on improved local dairy relationships..

History

Scott Pederson and Steve Yeazel began working to bring True Coffee Roasters to life in early 2010, and then reached out to Madison-area entrepreneur Tom Weigand to be added as a partner. Steve has been involved in the coffee and restaurant business - most recently in wholesale coffee sales - for more than twenty years and Scott has been an integral part of the Madison small batch coffee scene for many years. Britt Wiedemann and Tom worked together as partners of a Noodles & Company franchise - and Britt came onboard to bring restaurant operations expertise to the team. Darlene Murphy was added to handle marketing and communications, after working Tom for many years, and brings along over 10 years of marketing experience.
