Products

Yahara Bay is the first Dane county legal distillery. As of April 2008 we are producing premium vodka, rum and gin, and Lemoncello. Apple brandy was barreled December 2007 and will be ready to bottle in the fall of 2008. Other aperitifs are being developed.

Philosophy

Yahara Bay buys as much as possible from local farmers and fruit producers for the main ingredients needed for fermentation before distilling. The apples have come from the Kickapoo Valley, the cranberries from the growers in the northern part of the state, sorghum from the southern part of Wisconsin. Spices have been found from many area sources including Madison.

History

In 2007 Yahara Bay opened as the first legal distillery in Dane county. We are distilling in a 90 gallon pot still made in Germany by the Christian Carl Company. Solid copper with a five plate system, this still was crated and shipped from Germany in pieces, then rec-constructed in our facility at Kinsley Way. The still is powered by a hot water boiler system. Our intention is to use local sources for products needed for the distillation process. This is going to be quite an adventure!
